Welcome to Karolina’s Kitchen, where I share the healthy recipes I create, restaurant reviews, fitness tips, and tidbits of my life. I started this blog to share recipes with my friends and clients. I hope you enjoy the content you find here!

About Karolina

Hi! My name is Karolina and I am a Registered Dietitian (RD, LD) in Las Vegas. I have been working as a dietitian since early 2011, with side projects as a personal chef and NASM personal trainer. I work for Children’s Heart Center, a pediatric cardiology practice. I spend my days counseling families of overweight children with high cholesterol, high blood pressure, pre-diabetes, and other cardiovascular risk factors. Children’s Heart Center is an amazing and rewarding place to work. I’m happy to be part of the Healthy Hearts Program team there!

I love to cook and read up on the science of nutrition- meaning everything from metabolism to food science and supplementation! I hold a bachelor’s degree from the University of Nevada, Reno in nutritional science, dietetics, and biochemistry. I like learning and sharing what I know, so if you’re interested in a great science podcast, click over to www.betasandwich.com , where a few of my friends and I record weekly reviews of the latest or most interesting bio-science and nutrition research studies and controversies.

Above all, my passion is to help people get healthy. As a dietitian, I help my clients by providing meal plans and nutrition counseling, leading grocery store tours, and teaching classes on various nutrition topics. The different audiences I work with keep things fun- I work with kids, parents, college students, personal trainers, fitness enthusiasts, and people in therapy for compulsive or disordered eating.

In my free time, my favorite things are to spend time outside or hang out with my husband. I also love spending time and going out to eat with my wonderful sister (a chef!). I like to stay active and my current fitness obsession is Crossfit, which consists of an ever changing combination of strength and metabolic training exercises. My coach and the people I meet at my Crossfit gym are awesome and encourage each other during workouts. They keep me coming back day after day.

I’d love to get to know you if you dropped by this page! Have any questions, suggestions, or concerns? Please contact me!

  1. Are you a Paleo RD? I’m just really curious because your recipes are so clean! I eat Paleo/Primal (still figuring out dairy, sometimes have dark chocolate or a glass of wine), but I have yet to meet a RD who doesn’t scold me for not eating “whole grains” and “healthy beans.” I just love your recipes and your attitude. It’s so good to see someone with credentials offering a “professional” take on Paleo.
