Welcome to Karolina’s Kitchen! I’m glad you’re here. I started this blog to share recipes and life updates with my friends and clients, but the content is evolving to reflect what I’ve learned in my experience working in nutrition. I hope you enjoy the content you find here!

About Karolina

Hi! My name is Karolina and I am a HAES Registered Dietitian and Certified Diabetes Educator in Las Vegas, Nevada. I have been working as an outpatient dietitian full time since early 2011, with side projects as a nutrition instructor, personal chef, and NASM fitness trainer.

I love to cook and read up on the science & psychology of food.  My education background is in nutrition science and biochemistry, but I’ve learned over the years that there’s a significant mental and emotional side to eating. What I want most is to help people settle into peace with food and body image.

In my free time, my favorite things are to spend time outdoors and hang out with my family. I feel more connected and grounded when I exercise, and my current fitness obsession is indoor cycling, which feels like a dance party to great music on a bike. If you’re in the Vegas area, you should come check out a class with me sometime!

  1. Are you a Paleo RD? I’m just really curious because your recipes are so clean! I eat Paleo/Primal (still figuring out dairy, sometimes have dark chocolate or a glass of wine), but I have yet to meet a RD who doesn’t scold me for not eating “whole grains” and “healthy beans.” I just love your recipes and your attitude. It’s so good to see someone with credentials offering a “professional” take on Paleo.
